Whats for breakfast?
Banana Muffins made with greek yogurt and Whole Wheat Blueberry supreme pancakes....
I hope everyone is enjoying their weekend! We sure are! Grandma from Chicago is visiting for a long weekend. So of course I need to prepare only the yummiest things for breakfast, lunch, and dinner ;)
For one, I always make sure that I buy way to many bananas so that we lots left over. That way I can make delicious baked goods whether it be breads, muffins, or breakfast cookies.
Banana Bread Muffins
As you should know, I just happened to have some very ripe bananas laying around. I needed something quick to prepare before school so I took my basic banana bread recipe and made muffins with it. Once again this recipe came from cooking light and it includes some flaxseed for some extra omega - 3's and greek yogurt in place of the oil.

I did not put the glaze on the muffins. Before I put them in the oven I sprinkeled some extra cinnamon and organic sugar on top. Then baked about 15 - 20 minutes for the muffins.
And we paired the muffins with some grapefruit and kiwi : )

Whole Wheat Blueberry Supreme Pancakes
I am a huge pancake/waffle person and so my son is also. Mostly everyday he asks for pancakes. Now these aren't the absolutely healthiest out there but you can indulge every once in a while.
Ingredients
- 2 eggs
- 2 cups whole wheat flour
- 1 3/4 cup of milk
- 2 tbls. brown sugar
- 4 tbls. vegetable oil
- 1 tsp. vanilla
- 5 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- organic blueberries
Directions
Beat eggs, then mix in all wet ingredients together.
Then mix together the remaining ingredients. If the mixture is too thick add a little bit of milk at a time to desired consistency.
Heat pans or griddle on medium heat. Spray with olive oil non stick spray.(much better than butter:/)
I used a 1/2 cup to pour the mixture for large pancakes, if you would like smaller ones use a 1/4 cup.
After you pour pancake mix onto pan sprinkle blueberries on top. (I use organic wild blueberries, they are smaller and much easier to bake with.)
Wait till batter begins to bubble or the sides begin to brown. Then flip till done.
TADA!
These really don't need any toppings because they're that good, or use powdered sugar or some 100% pure maple syrup. And of course always pair your dish with some fruit ; )
